XL Mocha Muffins

Craving something sweet, intense, and with coffee?
These XL mocha muffins from @drabeautiful are a real treat for any time of day.
Ingredients
10 g of bamboo flour
40g vanilla vegan protein
50 g almond flour
20g defatted almond flour
25g of tiger nut flour
30g of glycine
2 teaspoons of baking powder
1/2 teaspoon salt
1 teaspoon pure cocoa
1 tablespoon of Instant freeze-dried coffee
2 eggs
50g cashew cream
240 ml of cashew plant-based drink
Preparation
We beat the eggs, plant-based drink, glycine and cashew cream until the mixture is well combined.
We add the liquid mixture to the previously sifted dry ingredients: flours, protein, cocoa, coffee, salt and baking powder. Stir until a homogeneous dough is obtained.
We folded in the chocolate chips, reserving some for decoration.
We divide the batter into large muffin tins and bake in a preheated oven at 200°C for 10 minutes. Then, we lower the temperature to 180°C and bake for another 20-25 minutes.
Allow to cool completely before unmolding or handling.
