Ingredients

10 g of bamboo flour

40g vanilla vegan protein

50 g almond flour

20g defatted almond flour

25g of tiger nut flour

30g of glycine

2 teaspoons of baking powder

1/2 teaspoon salt

1 teaspoon pure cocoa

1 tablespoon of Instant freeze-dried coffee

2 eggs

50g cashew cream

240 ml of cashew plant-based drink

Chocolate chips

Preparation

We beat the eggs, plant-based drink, glycine and cashew cream until the mixture is well combined.

We add the liquid mixture to the previously sifted dry ingredients: flours, protein, cocoa, coffee, salt and baking powder. Stir until a homogeneous dough is obtained.

We folded in the chocolate chips, reserving some for decoration.

We divide the batter into large muffin tins and bake in a preheated oven at 200°C for 10 minutes. Then, we lower the temperature to 180°C and bake for another 20-25 minutes.

Allow to cool completely before unmolding or handling.

Did you know that...?

Did you know that choosing organic and fair trade coffee is also part of SDG 12 (Responsible Consumption and Production)?

Conventional coffee is one of the most pesticide-intensive crops in the world. Organic coffee, on the other hand, protects soil fertility, biodiversity, and the health of the people who produce it.

When it is also fair trade, it guarantees stable prices, decent working conditions, and long-term business relationships.

A gesture as everyday as adding a spoonful of organic instant coffee to your muffins can become a conscious decision that drives a fairer and more sustainable food model.
