Coconut sugar is extracted from the sap of the flower of the coconut palm tree only by evaporation. It has a low glycemic index (35), which helps prevent blood sugar levels from shooting up quickly and then falling sharply when consumed. Contains inulin, which helps delay the absorption of glucose.
