Coffee and apricot jam cake with cream cheese icing

Coffee and apricot cake with vegan cream cheese frosting: juicy, aromatic and with the perfect balance between the intense touch of coffee and the fruity sweetness of the jam. A delicious and original option for breakfasts, snacks or any special moment.
Ingredients
6 eggs at room temperature
55 ml Greek coconut yoghurt
125 ml cashew nut vegetable drink
80 g coconut flour
30 g of vegan vanilla protein
1/2 tablespoon cinnamon
1/2 tablespoon freeze-dried coffee
30 g ground erythritol + 30 g glycine grains
1 teaspoon of food additive
1/4 teaspoon salt
Apricot jam
Vegan cream cheese
Vanilla stevia
Preparation
- Preheat the oven to 175 °C.
- Beat the eggs in a bowl until fluffy.
- Gradually add the vegetable drink, the liquid coffee and the yoghurt, stirring well.
- Gently fold in the previously sieved dry ingredients.
- Pour the mixture into a baking tin and bake at 175 °C for 35-45 minutes.
- Once cooled, cut into layers and fill with apricot jam.
- Prepare the frosting by whipping the vegan cream cheese with vanilla stevia and cover the cake.
Ready to enjoy: a cake with a coffee aroma, natural sweetness and a fruity touch that will make your breakfasts or snacks unforgettable.
