Ingredients

  • 300 g of vegetable drink
  • 100g of AlterNativa3 coffee
  • 40 g of sweetener or sugar
  • 2 g of agar-agar (powdered vegetable thickener)
  • 1 tablespoon of vanilla essence

Step by step

  1. Put the vegetable drink, the coffee and the sweetener (or sugar) in a saucepan. Add the agar-agar with a strainer and then add the vanilla.
  2. Stir everything well and, in about 2 minutes, bring it to the boil.
  3. Remove from the heat and continue stirring.
  4. Distribute it into molds, let it cool down and then put it in the fridge until they are well set.
  5. Unmold and serve: alone, with cream, with caramel… whatever you prefer!

Ingredients

For the base (4 servings/glasses)

  • 15 g of almond flour
  • 20 g of coconut flour
  • 1 teaspoon of cinnamon powder
  • 1 teaspoon of psyllium
  • 2 eggs
  • 80 ml of coconut milk
  • 2 teaspoons of AlterNativa3 freeze-dried instant coffee
  • 2 teaspoons of powdered erythritol

For the cream

  • 30 g of erythritol powder
  • 100 ml of coconut milk (the thick part of the can)
  • 1 teaspoon of agar-agar
  • 100 ml of soaked cashews (12 hours to remove maximum antinutrients and soften them)
  • 100 ml of vegan cream cheese
  • 1 teaspoon of liquid vanilla

 Step by step

  1. Beat the eggs, mix them with the flours, cinnamon and psyllium and put it in the microwave for 2 minutes.
  2. Heat the coconut milk and add the instant coffee and the erythritol. Stir until everything is perfectly integrated.
  3. Crumble the mixture from the microwave well. Then, add the coffee mixture with coconut milk and beat it with a hand blender until it has a very, very dense puree texture.
  4. Put the mixture in the glasses as the base of the tiramisu and set it aside.
  5. Now, let’s make the tiramisu cream. First, grind the drained cashews with a blender together with the coconut milk.
  6. Once it has achieved a creamy texture, put it in a bowl, add the rest of the cream ingredients and mix it with a whisk to achieve a perfect and homogeneous texture.
  7. Add the cream into the glasses on top of the coffee base and let it cool down overnight if possible.
  8. Before serving it, if you want a perfect result, sprinkle some cocoa powder on top.
