Giant chocolate, walnut and coffee pancake

Fancy a breakfast or snack that smells like Sunday even on weekdays? Today we're sharing a simple and delicious recipe for lovers of chocolate, nuts... and of course, coffee. Giant chocolate, nuts and coffee pancake by @drabeatiful, perfect to go with your favourite cup of AlterNativa3.

Ingredients

50 g almond flour

20 g of vegan vanilla protein

30 g tiger nut flour

1 teaspoon of food additive

1/4 teaspoon salt

1 + 1/2 tablespoons ground erythritol

1 teaspoon of freeze-dried coffee from AlterNativa3

80 g nature cashew nut vegetable drink

2 eggs

Preparation

  1. Sieve the dry ingredients through a sieve and set aside.
  2. In another bowl, beat the eggs with the erythritol until creamy.
  3. Gradually add the vegetable drink while continuing to whisk.
  4. Fold in the dry ingredients.
  5. Pour the mixture into a pan or mould, add chocolate chips and nuts.
  6. Bake for 12 minutes at 180 °C. Leave to cool... and enjoy.
