The Chemex extraction method belongs to the filter coffee group.
The Chemex is a drip method, in which the water passes through a layer of ground coffee and a paper filter, resulting in a totally clean cup of coffee, without sediment. Chemex filters are made of very porous paper, they are between 20 % and 30 % heavier than those of other coffee machines, so they retain the oils suspended during extraction better. This means that the impurities and oils in the coffee are retained in the filter itself.
The Chemex coffee machine is an item that was designed in the 1940s by inventor Peter J. Schlumbohm, who was also a chemist, which explains its more laboratory-like appearance, but at the same time makes it so elegant and timeless.
Made of non-porous borosilicate glass that does not absorb odours, flavours or chemical residues, leaving the taste of the coffee unchanged.
It has a wooden handle and a leather cord, which in addition to giving it an unequalled aesthetic appearance, allows heat insulation so that it can be picked up without the risk of burns.

How to use:
- Grind your favourite coffee beans to a medium-coarse size.
- Place the filter in the neck of the Chemex coffee machine. Cone-shaped.
- Add the ground coffee to the filter, well distributed and without squeezing it.
- Add hot water, between 90ºC and 96ºC, starting from the centre and circling to the outside.
- Once the coffee has been moistened, leave it to infuse for 30 seconds.
- After infusion, we continue to pour water in circles.
- After 3 to 5 minutes, the coffee is ready. Remove the filter with the ground coffee and discard it.
- Before serving the coffee, stir it gently to oxygenate it.
