The origin of panellets as an offering to the deceased

It is believed that the origin of panellets dates back to the 18th century, when were made to be taken to the graves of the deceased as an offering.. At that time, the peasants used the dried fruits they had collected. Then they took the sweets to church to bless them and finally they offered them in the cemeteries.

This, of course, was only the beginning. There is evidence that panellets began to be raffled at popular festivals in Barcelona. This happened in 1796, and from then on they became increasingly popular. Little by little, they spread and their heyday came in the 19th century, when the number of cake shops began to proliferate.

European Food Quality Label in 2002

A major milestone in the history of panellets was reached in 2002, when obtained the European Food Quality Label.. In fact, they were the first European product to do so! And of course, they have become a highly prized sweet and, of course, a classic of our traditions.

Ingredients

  • 300 g vegetable drink
  • 100 g of the AlterNativa3 coffee
  • 40 g sweetener or sugar 
  • 2 g agar-agar (vegetable thickening powder)
  • 1 tablespoon vanilla essence

Step by step

  1. First put the vegetable drink, coffee and sweetener (or sugar) in a saucepan. Then add the agar-agar with a sieve and finally the vanilla.
  2. Stir well and, in about 2 minutes, bring to the boil.
  3. Remove from the heat and continue stirring.
  4. Now, divide into moulds, leave to warm and then put them in the fridge until they are well set.
  5. Finally, unmould and serve: plain, with cream, with caramel... whatever you prefer!

Step by step

1️. First hydrate the gelatine sheets in water.

2. In a saucepan over medium heat, mix the eggs and beaten egg whites with the rest of the ingredients (except for the soaked gelatine sheets, which we will put in at the end) and stir continuously with a whisk.

3. As soon as it thickens a little and is homogeneous, add the gelatine sheets and stir for a further 30 seconds (just to integrate them).

4. Once the mixture has been integrated, put it all in a bowl and leave it to stand until it has cooled.

5️. Once lukewarm, put it in the fridge and wait at least 4-5 hours before eating.

6️. When we are going to eat it, we add our favourite toppings on top. For example, we can add creaminess with some nut cream and a crunch with cocoa nibs.

For the base (4 cups)

For the cream

  • 30 g erythritol powder
  • 100 ml coconut milk (the thicker part of the canned milk)
  • 1 teaspoon agar-agar
  • 100 ml soaked cashew nuts (12 h to remove the maximum of anti-nutrients and soften them)
  • 100 ml vegan cream cheese
  • 1 teaspoon liquid vanilla

 Step by step

  1. Beat the eggs, mix with the flours, cinnamon and psyllium and microwave for 2 minutes.
  2. Heat the coconut milk and add the soluble coffee and the erythritol. Stir until everything is perfectly integrated.
  3. We are going to crumble the mixture that we had put in the microwave. Then, add the mixture of coffee and coconut milk and blend with a hand blender until it has a very dense puree texture.
  4. We put the result as a base in our little glasses and set aside.
  5. Next, we will make the tiramisu cream. The first thing we are going to do is to blend the drained cashew nuts with our blender together with the coconut milk. 
  6. Once a creamy texture has been achieved, put it in a bowl, add the rest of the ingredients of the cream and mix with a whisk to achieve a perfect and homogeneous texture.
  7. Then add the cream in our little glasses on top of the coffee base and leave to cool overnight if possible.
  8. When we are going to eat them, and if we want to reach perfection, we sprinkle them with cocoa powder.

  • 30 g cucurbita pumpkin puree (roasted and drained pumpkin)

1️. First, Mix the hot coffee with all the ingredients, except the coconut milk and cinnamon, and stir well until a homogeneous mass is formed (the heat of the coffee should be enough to homogenise it well).

2️. Once everything is well mixed, add the warm milk and mix again.

3️.  Finally, sprinkle the cinnamon on top and serve piping hot.
