Para conseguir unos «panellets» excepcionales

equal parts sugar and chopped almonds

with our hands we must mix

to make a marzipan.

To give consistency with egg whites you lower it.

and a product has to be mixed

para dar sabor y nombre al «panellet»

which you cut into square, round or mushroom shapes.

If the panellets are made of pine nuts

you will have to make them round

and so that they don't fall apart, with your hands tightly clenched

stick the nut on, brush with beaten egg.

Place them on a greased tray with oil.

that at high temperature inside the oven will go into the oven

and when they start to turn golden in colour

you will take them out of the oven in no time.

The panellets must be left to cool.

so that they can then be eaten.

Mix the almonds and sugar, make a volcano and add the egg white. Knead until you obtain a plasticine-like dough and leave to rest overnight. We make a ball and stretch it with both hands open, creating a cylindrical bar. With a knife we cut out equal rounds and make small balls. From this measure, we create our panellets, letting our imagination run wild. Once the creations are finished, paint with the yolk of an egg and bake at 200º for 3-5 min. Let them rest and that's it!

We present an original dish to enjoy this summer and any time of the year.

Ingredients:

1 cup of ROYAL QUINOA

A little saltreal quinoa1

Olive oil

1 onion

1 red pepper

1 green pepper

Dried plums

Fairtrade Sweet Curry

Quinoa Real was the staple food of the Incas and was revered as a sacred grain.

To start, we will make the quinoa using the basic recipe, cleaning the quinoa several times until the water runs clear and placing it in a pot on the heat with two cups of water. When the water boils, lower the heat, add salt to taste and cover. Leave for about 20 minutes or until there is no water left. You can tell that it is well cooked because the bean remains slightly open.

Dice the onion and add it to the paella pan with a little olive oil. Meanwhile, clean the peppers and cut them into strips. When the onion is golden brown, add the peppers and mix everything together. We can chop the plums before adding them to the sauce. Leave for about 10 minutes until the peppers are ready and add the quinoa, stirring well so that it does not get stuck to the bottom of the paella pan. Season with sweet curry to taste. It can be served either hot or cold.
