Cinnamon-orange cocoa muffins

If you're looking for a healthy dessert, without refined sugar and full of flavour, you'll love this recipe for cocoa muffins with cinnamon and orange. With a juicy texture and a spicy aroma, it will become your favourite option to accompany breakfasts, snacks or to surprise with a different sweet treat.

Ingredients

For the muffin batter

  • 10 g bamboo flour (if you don't have any, add an extra 60 g almond flour, although the texture will vary slightly).
  • 15 g of vegan vanilla protein
  • 20 g cocoa with orange and cinnamon @alternativa3scoop
  • 40 g almond flour
  • 30 g tiger nut flour
  • 20 g ground erythritol
  • 2 teaspoons of baking powder (a mixture of cream of tartar and baking soda without aluminium, or baking powder)
  • ½ teaspoon salt
  • Zest of 1 orange
  • 120 g vegan cream cheese
  • 2 eggs
  • 30 g coconut oil

For coverage

  • Vegan cream cheese
  • Orange essential oil (optional)
  • Cinnamon powder
  • Caramelised orange in erythritol and coconut oil

Preparation

  1. Beat the eggs with the cream cheese, the melted coconut oil (previously cooled), the erythritol and the orange zest until smooth.
  2. Stir in the flours, protein, salt, and the impulsor (sifted) and mix with a wooden spoon to integrate all the ingredients well.
  3. Divide the batter into large muffin tins and bake for 10 minutes at 200 °C. Reduce the temperature to 180 °C and bake for a further 10 minutes.
  4. Allow to cool completely before unmoulding.
  5. For the topping, beat cream cheese with a few drops of orange essential oil (optional).
  6. Decorate the muffins with the cream, sprinkle cinnamon on top and add a half moon of caramelised orange for a perfect finish.
