Cocoa biscuit<\/strong><\/h5>\n

Ingredients<\/b>:<\/strong><\/p>\n

    \n
  • 5 egg yolks<\/li>\n
  • 25g invert sugar<\/li>\n
  • 93gr white sugar<\/li>\n
  • 182g pasteurised egg white<\/li>\n
  • 91gr flour<\/li>\n
  • 36gr cocoa with orange and cinnamon<\/li>\n
  • 55gr melted butter<\/li>\n<\/ul>\n

    Elaboration:<\/b><\/p>\n

      \n
    • Put 5 egg yolks, the invert sugar and the white sugar in a bowl.<\/li>\n
    • Mix all the ingredients together until they have tripled in volume.<\/li>\n
    • Put the pasteurised egg whites in another bowl and mix with the white sugar to make stiff egg whites.<\/li>\n
    • When we have both processes, we put them together in a single bowl, to which we then add the flour and the cocoa with orange and cinnamon. Add the sifted ingredients and pour them into the bowl as a rain, and mix with gentle, enveloping movements.<\/li>\n
    • Once the dough has a homogeneous and uniform texture, add the butter melted at 40\u00ba (so as not to break the structure of the mixture).<\/li>\n<\/ul>\n
      Orange marmalade<\/strong><\/h5>\n

      Ingredients<\/b>:<\/strong><\/p>\n

        \n
      • 1.5gr lemon juice<\/li>\n
      • 1.5g orange juice<\/li>\n
      • 65g sugar<\/li>\n
      • 3,2gr pectin NH<\/li>\n<\/ul>\n

        Elaboration:<\/b><\/p>\n

          \n
        • Mix the juices in a saucepan and heat them. When it starts to boil, add the sugar and pectin.<\/li>\n
        • Mix everything together to form a homogeneous mass and stir until it reaches 100\u00baC.<\/li>\n
        • Once it has reached 100\u00baC, remove from the heat and set aside at room temperature for later use.<\/li>\n<\/ul>\n
          Milk chocolate cream<\/strong><\/h5>\n

          Ingredients:<\/b><\/p>\n

            \n
          • 250gr cream<\/li>\n
          • 60g egg yolk<\/li>\n
          • 18g gelatine<\/li>\n
          • 80gr cold water<\/li>\n
          • Milk chocolate 126gr<\/li>\n
          • Minigotas dark chocolate 64gr<\/li>\n<\/ul>\n

            Elaboration:<\/strong><\/p>\n

              \n
            • Add the cream and egg yolk to a saucepan and make a cr\u00e8me anglaise.<\/li>\n
            • Once cooked, without exceeding 80\u00baC and with a dense texture, add the gelatine so that it is incorporated and dissolved and the cold water.<\/li>\n
            • Pour all the batter over the milk chocolate mixture and the dark chocolate couverture.<\/li>\n
            • Once we have the mixture, we pass it through the mixer to integrate it all, avoiding air bubbles.<\/li>\n<\/ul>\n
              Cocoa syrup<\/strong><\/h5>\n

              Ingredients:<\/b><\/p>\n

                \n
              • 150gr water<\/span><\/li>\n
              • 40gr panela sugar<\/span><\/li>\n
              • 16gr of pure cocoa<\/span><\/li>\n<\/ul>\n

                Elaboration:<\/b><\/p>\n

                  \n
                • Mix it all together in boiling water. When it boils and the sugar has dissolved, remove from the heat and add 1.5g of orange liqueur.<\/span><\/li>\n<\/ul>\n
                  Glossy glaze<\/strong><\/h5>\n

                  Ingredients:<\/b><\/p>\n

                    \n
                  • Cream 100gr<\/span><\/li>\n
                  • Water 25gr<\/span><\/li>\n
                  • Sugar 185gr<\/span><\/li>\n
                  • Gelatine 18gr<\/span><\/li>\n<\/ul>\n

                    Elaboration:<\/b><\/p>\n

                      \n
                    • Now we will make a glossy glaze to protect the cake and give it a nice and attractive appearance.<\/span><\/li>\n
                    • Put the cream, water and sugar in a saucepan.<\/span><\/li>\n
                    • Bring it to the boil at 95\u00baC. When it reaches 95\u00baC, add 60gr of cocoa powder, once integrated, bring it to 100\u00baC, remove it and add the gelatine.<\/span><\/li>\n<\/ul>\n
                      Orange tile<\/strong><\/h5>\n

                      Ingredients:<\/b><\/p>\n

                        \n
                      • 50g icing sugar<\/span><\/li>\n
                      • 16g of plain flour<\/span><\/li>\n
                      • 18g natural orange juice<\/span><\/li>\n
                      • 18gr melted butter<\/span><\/li>\n
                      • 20gr of flaked almonds<\/span><\/li>\n
                      • 1 grated orange zest<\/span><\/li>\n<\/ul>\n

                        Elaboration:<\/b><\/p>\n

                          \n
                        • Mix the icing sugar, flour, orange juice, melted butter, flaked almonds and the grated peel of an orange. Using a piping bag, cover the top of the biscuit with this mixture.<\/span><\/li>\n<\/ul>\n
