It is produced from the sap of the flowers of the coconut palm, which grow abundantly in tropical climates.
Sweet flavour, with a hint of caramel. Contains iron, zinc, potassium, antioxidants and dietary fibre. Coconut sugar is extracted from the sap of the coconut palm blossom by evaporation only. It has a low glycaemic index (35), which helps prevent blood sugar levels from spiking rapidly and then dropping sharply when consumed. It contains inulin, which helps slow glucose absorption.
