Quick tiramisu-style sponge cake in the microwave

For the cake
- 1 and ½ tablespoons erythritol
- 60 g walnut flour
- 10 g vanilla protein
- 10 g vegan chocolate protein
- 3 eggs
- 1 tablespoon of soluble coffee AlterNativa3
- 1 teaspoon xanthan gum
- 45 g melted butter
- 1 teaspoon of yeast
- A pinch of salt
For the filling and topping
- Vegan cream cheese
- Erythritol ground to taste
- Pure cocoa for dusting
- Dark chocolate 100% grated
Preparation
- Mix all the cake ingredients in a bowl until you have a homogeneous dough.
- Pour the batter into a round microwave-safe mould.
- Cook at maximum power for 90 seconds.
- Leave to cool for a few minutes and turn out.
- Cut the sponge cake into three horizontal layers for filling.
- Beat the vegan cream cheese with the erythritol until smooth.
- Fill the cake layers and cover the surface and sides.
- Sprinkle pure cocoa and grate 100% dark chocolate on top.
