An espresso treat for coffee and sweet lovers. This @drabeatiful cookie combines the intense aroma of coffee with the smoothness of almonds and the creamy touch of coconut. Its sponge-like texture fresh from the microwave and its irresistible interior make it a perfect treat for any time of the day. It's so easy to prepare that you'll be making it more than once.

Ingredients

  • 10 g coconut oil
  • 25 g almond flour
  • 10 g coconut cream (the thick part of the can)
  • 1 teaspoon erythritol
  • 1 teaspoon vegan vanilla protein (you can use flavouring or leave it out)
  • 1 egg yolk
  • ½ teaspoon of freeze-dried coffee

Preparation

Mix of ingredients:

In a bowl, mix all the ingredients until a homogeneous dough is obtained.

Preparation of the container:

Grease a microwave-safe bowl with coconut oil, butter or ghee to prevent the dough from sticking. Pour the mixture in and smooth the surface.

Fast cooking:

Place the bowl in the microwave and cook for 1 minute at maximum power. The time may vary slightly depending on the power of your microwave, so adjust if necessary.

Final touch and presentation:

As soon as you take it out, add pieces of White Chocolate 40% Bio Fairtrade couverture to melt with the heat.
Serve with Greek coconut yoghurt and a pinch of Alternativa3 freeze-dried coffee sprinkled on top. When stirred, you get a delicious, creamy and aromatic coffee yoghurt.
