By following these steps you will get a fluffy cake with an intense orange flavour and a chocolate coating that makes it even more irresistible.

  1. Place the whole oranges in a pot, cover with water and boil for 1.5 to 2 hours, until they are tender and you can easily pierce them with a skewer.
  2. Turn them from time to time so that they cook evenly. Drain and leave to cool.
  3. Mash the whole oranges, including the peel, to a fine puree.
  4. Preheat the oven to 170 ºC. Line a 22 cm round baking tin with baking paper and grease with margarine.
  5. In a large bowl, mix the almond flour, brown sugar and baking powder.
  6. In another bowl, beat the eggs with an electric mixer on medium-high speed for about 6 minutes. Add the orange puree and mix well.
  7. Stir in the sugar mixture, almond flour and baking powder, beating until all the ingredients are combined.
  8. Pour the batter into the tin and bake for 1 hour or until the surface is firm when gently pressed.
  9. Leave to cool in the tin on a wire rack. Once cool, turn out and remove the baking paper.
  10. For the topping, melt the chocolate in a bain-marie together with a little rice drink until smooth. Leave to cool and cover the cake with the mixture.
