Coffee doughnuts with chocolate and pecan topping
For 6-8 doughnuts
Delicious, nutritious, no-sugar-added doughnuts made with natural coconut, tiger nut and almond flours, sweetened gently with glycine and enhanced with a touch of coffee. Baked to achieve a fluffy texture and topped with 100% chocolate and pecans. A recipe from @drabeautiful that turns indulgence into wellness.
Ingredients
- 1 egg
- 3 tablespoons olive oil
- 2 tablespoons of vanilla espresso coffee
- 1 tablespoon of freeze-dried soluble coffee
- 3 tablespoons Greek coconut yoghurt
- 30 grams coconut flour
- 30 grams of tiger nut flour
- 120 grams of almond flour
- 3 tablespoons of powdered glycine
- 1 tablespoon of impeller
Preparation
- Preheat the oven to 200 °C.
- Beat the egg with the glycine until white and add the yoghurt, olive oil and espresso. Continue beating until smooth and set aside.
- Mix the dry ingredients in a bowl and make a well in the centre. Pour in the liquids and mix with a wooden spoon until you have a thick batter.
- Fill the moulds by seating the dough well.
- Bake for 5 minutes at 200 °C and reduce to 180 °C to bake for a further 15-20 minutes, until a toothpick comes out clean.
- Leave to cool completely on a wire rack and in the mould before handling.
- When cool, turn out and coat the surface with melted 100% chocolate and pecans.
