Chocolate and almond sponge cake
For 10 persons
A sponge cake with a dessert soul and a cocoa heart from @drabeatiful. Soft, moist and just the right balance between the sweetness of chocolate and the aroma of coffee. The creamy chocolate and cheese filling gives it an irresistible touch that makes it a delight for any time of the day.
Ingredients
For the cake:
- 4 eggs
- Chocolate-flavoured liquid stevia (to taste)
- 3 tablespoons of extra virgin olive oil
- 50 g almond flour
- 20 g chocolate flavoured vegan protein
- 20 g of pure cocoa powder
- 1 teaspoon of freeze-dried decaffeinated coffee
- 1/2 teaspoon baking powder (baking powder or cream of tartar + baking soda mix)
- 1/4 teaspoon salt
For the filling:
- 115 g cream cheese
- 40 g dark chocolate minimum 85 %
- 1/2 teaspoon of freeze-dried decaffeinated coffee
For coverage:
- 100 g Greek coconut yoghurt (or unsweetened vegetable alternative)
- 30 g of melted dark chocolate
Preparation
Preparation of the sponge cake
- Preheat the oven to 200 ºC.
- In a bowl, beat the 4 eggs with the chocolate-flavoured liquid stevia until the mixture is airy.
- Add the olive oil and integrate.
- In another bowl, mix the dry ingredients: almond flour, chocolate protein, cocoa powder, freeze-dried coffee, baking powder and salt.
- Gradually add the dry ingredients to the egg mixture and stir until smooth.
- Pour the batter into a rectangular baking tin lined with baking paper.
- Bake 5 minutes at 200 ºC, then lower to 180 ºC and bake 6-8 minutes more until firm but fluffy.
- Allow to cool completely before cutting.
Filling Preparation
- In a saucepan over low heat, melt the cream cheese with the dark chocolate and decaffeinated coffee until smooth and homogeneous.
- Leave to cool slightly.
- Slice the sponge cake into 2 or 3 layers, fill it with this cream.
Preparation of Coverage
- Mix the Greek coconut yoghurt with the melted dark chocolate until creamy.
- Cover the surface of the cake evenly.
Optional: sprinkle some pure cocoa or finely ground coffee beans for decoration.
