It is an unrefined sugar that retains all the plant's nutritional substances, which are virtually eliminated in refining.
To make Mascobado, the sugar cane is cut and pressed in a mill. This produces a thick syrup which is then boiled. When the consistency is right, it is left to cool, stirring constantly to achieve homogeneous crystallisation.
