Tiramisu Cookies
For 15 biscuits
Inspired by the classic Italian dessert, these Tiramisu Cookies from @drabeatiful combine the smoothness of cream cheese with the intense touch of freeze-dried coffee from @alternativa3scoop and the unmistakable taste of pure cocoa.
Ingredients
115 grams of cream cheese
1/2 tablespoon of freeze-dried coffee @alternativa3scoop
10 grams of bamboo flour (you can add 60 grams more almond flour but it will change the texture. The dough will lose some of its fluffiness).
90 grams of almond flour
1 teaspoon tapioca starch
20 grams ground erythritol
1 egg
1/2 teaspoon of baking powder (you can use a mix of cream of tartar and baking soda without aluminium or Royal baking powder)
1/4 teaspoon salt
Preparation
- Melt the cream cheese in a bain-marie and beat with the coffee.
- Put the mixture in the fridge and leave it for about 20 minutes.
- In another bowl mix the dry ingredients except for the erythritol.
- After 20 minutes, beat the cold cheese and coffee mixture with the ground erythritol until well blended.
- Add the egg and beat again. Add the dry ingredients and mix well with a wooden spoon.
- Let the dough rest for 30 minutes. .
- After 30 minutes we make biscuits with about two tablespoons of dough per biscuit (about 30 ml volume).
- Forms rounded, slightly flattened balls.
- Preheat the oven to 200ºC.
- Bake at 190ºC for 10-12 minutes. Until the edges are firm and the centre slightly puffed.
- Once cooled we decorate them with coconut cream (the solid part of the cooled can of coconut milk) whipped with a little bit of freeze-dried coffee @alternativa3scoop
- Sprinkle with pure cocoa.
