Ingredients
Choosing quality ingredients is essential for an orange and almond cake that is fluffy, full of flavour and suitable for all types of diets.
For the cake
- 2 oranges
- 250 g almond flour
- 250 g brown cane sugar
- 5 large eggs
- 1 teaspoon baking powder
For coverage
- 200 g dessert chocolate
- A splash of rice drink
Preparation
By following these steps you will get a fluffy cake with an intense orange flavour and a chocolate coating that makes it even more irresistible.
Preparation
- Place the whole oranges in a pot, cover with water and boil for 1.5 to 2 hours, until they are tender and you can easily pierce them with a skewer.
- Turn them from time to time so that they cook evenly. Drain and leave to cool.
- Mash the whole oranges, including the peel, to a fine puree.
- Preheat the oven to 170 ºC. Line a 22 cm round baking tin with baking paper and grease with margarine.
- In a large bowl, mix the almond flour, brown sugar and baking powder.
- In another bowl, beat the eggs with an electric mixer on medium-high speed for about 6 minutes. Add the orange puree and mix well.
- Stir in the sugar mixture, almond flour and baking powder, beating until all the ingredients are combined.
- Pour the batter into the tin and bake for 1 hour or until the surface is firm when gently pressed.
- Leave to cool in the tin on a wire rack. Once cool, turn out and remove the baking paper.
- For the topping, melt the chocolate in a bain-marie together with a little rice drink until smooth. Leave to cool and cover the cake with the mixture.
